Boneless chicken thigh is stewed with stock, caramelized onions, diced tomatoes and tomato paste, loads of spinach. It’s finished with unsweetened peanut butter and a tiny shake of chili to warm things up a bit. Served atop fufu “dumplings”. Think potato gnocchi, but made out of cassava root and plantain flour. The resulting dish is a taste of comfort food from another part of the world, and is simply delicious!
