Our version of bolognese sauce is made with pork shoulder, pancetta (Italian unsmoked bacon), and beef cheeks. We mince the proteins, then simmer them with mirepoix (vegetables), tomatoes, extra virgin olive oil, and beef stock. The end result is an unctuous, rich sauce that is packed with umami. The bolognese is served with mushroom and pepper tagliatelle (a wider ribbon pasta), pecorino, and fresh marjoram. Comes with a side of broccoli rabe dressed with olive oil
