To make this tart, we first press all the juice out of Oregon strawberries and raspberries. The juice is then lightly sweetened with coconut sugar and set with agar. We then fold the berries back into the beautifully red and intensely flavored gel to create a wonderfully fresh filling that is nothing but berries! The red berry filling is then spooned into a fresh baked short crust, and garnished with just a dab of whipped cream. Berry perfection!
