This dish is from Goa, India. It’s incredibly delicious with complex layers of flavors, the backbone of which is coconut, onions, and tamarind with chicken stock. We carefully toast and grind many fresh spices which include cumin, coriander, cinnamon, mace and nutmeg (did you know these come from the same fruit? Mace is a spidery lace that starts out wrapped around the actual nutmeg!), and star anise to name a few. If you enjoy Indian curries, you will love this! Comes with jasmine rice.
