This is a spicy national dish from Bahrain. Chicken Machboos starts like other basic curries, with ginger, garlic, and onions that are browned in ghee after browning the chicken. Then baharat (another in a long line of spice blends that form a curry native to Arabic cooking) is added along with dried Persian limes called loomi. Tomato and fresh jalapeño round out the mix. The chicken is slowly stewed to perfection, with rice being added when the meat is nearly cooked through. This warming and delicious meal comes with a side of cucumber salad.
